Greek Quinoa Meatballs

 So...meatballs. The dish which can be made a million ways. And this is one of the recipes with different ingredients in it. Its super delicious. This is the second time I made this and has become one of my fav recipes.


Greek Quinoa Meatballs (Meatballs with greek seasoning and quinoa)

Greek Quinoa meatballs

Ingredients:

  1. 1 lb lean ground meat
  2. 1/2 cup quinoa cooked to package directions and cooled
  3. 1/2 cup grated onion (squeezed out of as much water as possible)
  4. 1/2 cup whole fat plain yogurt
  5. 1 cup frozen spinach thawed and squeezed out of water
  6. 1 tablespoon each of dried basil, oregano, garlic powder
  7. 1 teaspoon salt, red pepper flakes
  8. 1/2 teaspoon each of black pepper
Mix all the ingredients together with a light hand. Make 20-24 meatballs. Preheat oven to 350 degrees. Bake for 30 minutes. Flip the meat balls midway.

Enjoy as an appetizer or serve with your favorite bread as a meatball sandwich or with spegetti

Squash Kheema

Kheema is nothing but ground meat...ground beef, ground lamb, ground chicken or ground turkey. Use whatever is your favorite ground meat for this recipe. It is super fast to cook and super great to serve with either rice or roti

Ingredients

  1. 1 tablespoon oil
  2. 1 teaspoon ginger garlic paste or finely chopped garlic
  3.  1/2 lb ground meat (any kind)
  4. 1 large or 2 small yellow squash or zucchini cut into 1 cm cubes
  5. 1/2 teaspoon each of salt, chilli powder, cumin powder, coriander powder
  6. 1/2 cup chopped onions
In a pan heat the oil and fry the onions till they start getting dark brown. Add the ginger-garlic paste and fry for a minute. Add the meat and cook with all the spices for 10 minutes. Add the squash or zucchini and cook for 7-10 more minutes. garnish with cilantro and enjoy with Chickpea Quinoa Rice

Rajasthani Kheema

Kheema or minced meat, if done right is great. Every country, every region in every country has thier own way of making dishes with minced/ ground meat. This recipe is from one of the states in India...Rajasthan. Here is the  original recipe

 Rajasthani Kheema (Ground meat cooked in spices)
Rajasthani Kheema
Ingredients:

  1. 2 Tablespoons Vegetable Oil
  2. 2 Green Cardamom
  3. 1 inch Cinnamon
  4. 2-3 Clove
  5. 1 cup Onion Chopped
  6. 2 tsp Ginger Garlic Paste
  7. 1 cup Tomato Chopped
  8. 1/2 cup plain yogurtWhisked
  9. 5-6 Green Chilli Slit Into half
  10. 1 teaspoon each of 
  11. 1/2 teaspoon each ofTurmeric Powder ,Black Pepper , salt, garam masala powder
  12. 1 lb ground chicken or ground meat or ground lamb
  13. 1/2 cup Mint Leaves Chopped
  14. 2 tablespoons Kasuri Methi
  15. 2-3 strands of  Greens onionsChopped
  16. 2 inch Ginger Julienned
  17. 2 tbsp Lemon Juice

Heat theoil in a pan. Add green cardamom, cinnamon and cloves. Add onion and fry until slightly browned. Add ginger garlic paste and fry until golden brown. Now add tomato and yogurt and cook for 5  minutes.Add all the spices and mix well and cook for 2 more minutes
Add chicken keema and salt and cover and cook until it is cooked.
Now add kasuri methi, spring onion greens, ginger, lemon juice and mix well.
Garnish with fresh coriander.
Serve hot with any Indian bread or with Rajasthani Pulao

Veggie filled MeatLoaf

Meat loaf is super yummy. But only problem with it is...where are the veggies???

These days it has become a struggle for people to incorporate vegetables in their diet. So the meat loaf I made is filled with veggies and is super delicious. Once you have eaten this meat loaf you will never go back to the plain old regular meat loaf

Ingredients:


  1. 1 lb ground sirloin, 1 lb ground chicken
  2. 1 egg beaten
  3. 1 each of medium small zucchini, yellow squash, carrots
  4. 1/2 cup well drained canned/frozen spinach chopped
  5. 1/2 cup fine grated onion
  6. 1 teaspoon finely grated garlic
  7. 1 teaspoon coriander powder (optional)
  8. 1 teaspoon salt
  9. 1/2 teaspoon black pepper
  10.  ketchup
  11.  1/2 cup bread crumbs and 1/2 cup milk
  12. 1 stalk green onion chopped
  13. 1-2 tablespoons finely chopped coriander or parsley
Grate all the vegetables on the fine side and squeeze as much water out of them as possible.

Mix all the ingredients for the meat loaf cover and set aside for 30-60 minutes

Pre heat the oven to 350 degrees. Pack the meat in a loaf pan and bake for 50-60 minutes. Around 40 minutes, drain the liquid from the pan and continue to bake

Take the meat loaf and turn it upside down and slather a thin layer to ketchup or barbecue sauce on top and let it rest for 10 minutes. Cut into slices and enjoy

Ground beef curry

I have been making dry ground beef recipes recently quite a bit for my Meat pockets. They have become my kids favorite school lunch. They are taking it to school quite often


Ground beef curry 


Ingredients:

  1. 1 lb ground beef or lamb
  2. 1 teaspoon each of finely chopped garlic, cumin powder, coriander powder, garam masala
  3. 1/2 teaspoon each of salt, chilli powder
  4. 1 cup black beans (canned) -drained and rinced
  5. 1 cup corn (optional)
  6. 1/2 cup chopped onions
  7. 1 cup chicken broth
  8. 1 potato and 1 carrot (optional)
  9. cilantro for garnishing
Heat a pan and fry the onions without any oil for 5-7 minutes. Add the beef along with all the spices and salt and cook for 5-7 more minutes or until its cooked through. Add the rest of the ingredients and simmer for 15 minute stirring occasionally. Garnish with cilantro and enjoy with hot steamed rice or roti of your choice
