Thai red mushroom curry

The red and yellow Thai curry pastes you get in the super markets are life savers when you want to make something different and do not have the ingredients like "lemon grass". And when you have these pastes its pretty easy to make Thai curries. By no means I will say they can compete with the real thing but they are still pretty awesome and delicious

Thai Red Curry Mushroom (Mushroom and other veggies cooked in red curry flavored coconut milk)
Ingredients

  1. 16 oz button mushrooms sliced
  2. 1 14 oz can coconut milk
  3. 1 chicken bouillon or substitute water or veggie broth
  4. 1 big or 2 small garlic pods chopped fine
  5. 1 tablespoon each of oil, red curry paste, fresh squeezed lemon juice
  6. 1 zucchini halved length wise and sliced
  7. 1 bell pepper (your fav color chopped)
In a pan heat the oil and fry the thai curry paste for a minute or two. Add the mushrooms ad zucchini and fry on high for 5-7 minutes. Reduce heat and add the garlic and bell pepper and stir well. Add the coconut milk and simmer for 10 minutes. Add lemon juice and garnish with cilantro and serve over brown rice

Veggie Quinoa and brown rice

This veggie filled brown rice and quinoa is such a filling and healthy dish that it has become one of my favorite.

Since you are already here looking for either quinoa or brown rice dishes you should definitely try it

Ingredients

  1. 1 cup brown rice
  2. 1/2 cup quinoa washed
  3. 1/2 cup each of mushrooms chopped, carrots chopped, peas, zucchini, corn
  4. 1/4 cup finely chopped onions
  5. 2 garlic pods  grated
  6. 1 teaspoon butter + 1 teaspoon olive oil
  7. 1 chicken bouillon
  8. 1/2 teaspoon black pepper
Note: Read the cooking directions for the brown rice and quinoa. Mine needed 55 minutes for brown rice and 10-12 minutes for quinoa. So I cooked brown rice for 40 minutes before putting in the quinoa in the same pot

In a pot boil 2 cups of water with the chicken bouillon and add the brown rice to it. Let it simmer for 40 minutes.

In a pan heat the butter + olive oil and fry the onions till they become tender. Add garlic and fry for a minute. Add all the vegetables and fry for 5-7 minutes. Set aside.

After the rice cooks for 40 minutes add 1/2 more cup of water and add quinoa and mix well. Add all the vegetables and stir to combine and simmer for 10-15 minutes. Cut the heat and let it rest for 5 minutes. Mix in the black pepper. Serve as is or if desired sprinkle with some cheese and enjoy with grilled chicken or salmon

Baked salmon dinner

Today was the fish day. I made baked salmon and a whole lot of different sides. It was delicious. Everyone loved it

Ingredients
1. 6 6-9 inch salmon filets
2. 1 teaspoon each of grated garlic, salt, dried basil, parsley
3. 1/2 teaspoon each of fresh ground black pepper, coriander (optional)
4. 2 tablespoons each of fresh lemon juice and olive oil

Marinade the fish for about 1 hr. Preheat oven to 375 degrees . Put the fish in a glass baking dish along with the marinade and bake for 30-40 minutes. Cover with a foil to keep warm until ready to serve . For the sides I made glaced carrots, buttered fire roasted corn, pickled beet root, black and brown rice, roasted sweet potato and carrots
