Salmon with Gnocchi foil packet

 This is one of the fancy looking foil packets dinners which comes together super fast and taste great and clean is minimal if any.

Ingredients 

  1. Shelf stable gnocchi packet
  2. 4 salmon fillets (I had salmon with skin on, you can use the skinless salmon fillets also)
  3. Cherry tomatoes cut in half breadthwise divided
  4. Asparagus7-8 per packet, trimmed
  5. 2 tablespoons olive oil, lemon juice divided 
  6. 1-1.5 teaspoons salt, lemon pepper divided

Pre heat oven to 375 degrees.

Dab the salmon dry and sprinkle with olive oil, salt and pepper. Lay this side down in the middle of a silver foil.  Add gnocchi, tomatoes and asparagus to the sides of the salmon. Sprinkle with the rest of the oil, salt and pepper. Close the foils tightly like a packet. No air vents.

Put all the packets on a baking tray and bake for 25

Minutes. Carefully open the packets ( be careful of the steam). Fold the foil down wards. Broil the salmon and gnocchi for 5 minutes.

Serve with a wedge of lemon or lime


Note: make the packets directly on a baking sheet so that the chance of them getting ripped is nil

Garlic baked Salmon and Broccoli

 This is a super easy and super delicious recipe. The Salmon and Broccoli just flew out of the pan


Garlic baked Salmon and Broccoli

Ingredients:

  1. 3-4 Salmon Fillets
  2. 2-3 crowns of broccoli and cut into florets
  3. 1 teaspoon chopped garlic
  4. 1 teaspoon salt
  5. 1/2 teaspoon pepper
  6. 1 tablespoon olive oil
Heat oven to 400°F or 375 degrees for dark pan. On a large rimmed baking sheet, lay the Salmon fillets and the broccoli.  Sprinkle salt and pepper all over the fish and the broccoli. Run the chopped garlic onto the fish. Drizzle with oil all over. Bake for 15 minutes.
Turn the fish and broccoli and bake for 10 more minutes. 
Enjoy Salmon and Broccoli with some brown rice

Baked salmon dinner

Today was the fish day. I made baked salmon and a whole lot of different sides. It was delicious. Everyone loved it

Baked salmon

Ingredients
1. 6 6-9 inch salmon filets
2. 1 teaspoon each of grated garlic, salt, dried basil, parsley
3. 1/2 teaspoon each of fresh ground black pepper, coriander (optional)
4. 2 tablespoons each of fresh lemon juice and olive oil

Marinade the fish for about 1 hr. Preheat oven to 375 degrees . Put the fish in a glass baking dish along with the marinade and bake for 30-40 minutes. Cover with a foil to keep warm until ready to serve . For the sides I made glaced carrots, buttered fire roasted corn, pickled beet root, black and brown rice, roasted sweet potato and carrots
