Simple crispy roasted cauliflower

Roasted Cauliflower is one of the best recipes in case you season the cauliflower well otherwise its just BLAH. This recipe is my second recipe for roasting and it makes the cauliflower more crispy than the other roasted cauliflower recipe

Note: I did not use any turmeric or any other ingredients which give color to my dish. I used the yellow cauliflower instead of white as I was feeling bored of white cauliflower

Ingredients:
  1. 1 medium small cauliflower (any color you prefer) ( I used Yellow cauliflower) cut into florets
  2. 2-3 tablespoons olive oil
  3. 1 heaped teaspoon corn starch
  4. 3/4 teaspoon each of salt, garlic powder
  5. 1/2 teaspoon black pepper
  6. 1 tablespoon each of soya sauce, white vinegar
  7. 1 teaspoon coriander powder (optional)
Mix all the ingredients together.
Bake at 400 degrees oven (mine was a black baking sheet, so I baked at 345 degrees) for 40 minutes. Turn the cauliflower mid way. Enjoy

Roasted Broccoflower with fennel seeds

Broccoflower is one of those things I like, especially when they have all kinds of colored cauliflower one beside the other in the super market. So, the other day I got it and thus begins the search to make something with it. And I made this roasted broccoflower dish mainly because I had all the ingredients for it and it turned out great. They just flew off the roasting pan.

Ingredients:
  1. 1 head broccoflower cut into florets
  2. 1 anchovy can chopped fine
  3. 1 teaspoon fennel seeds
  4. 1 tablespoon olive oil (I used the oil in which the fish was packed)
  5. 1/2 teaspoon salt if the fish oil has no salt
  6. 1 tablespoon fresh lemon juice
Pre heat the oven to 400 degrees.
Mash the mush with the oil and lemon juice and mix salt if using. Mix the broccoflower with the oil and the fennel seeds and roast for 40 minutes. Stir mid way. Enjoy

Roasted cauliflower hummus


Hummus is great but plain hummus can get pretty boring quite quickly. So I am always looking to make hummus with different flavors. So I found this recipe for roasted cauliflower hummus and I served it with chips on the game day... Serving with pita chips would greatly be appreciated

Roasted cauliflower hummus

Ingredients:
1. 2 cups or about 1/2 medium sized cauliflower cut into florets
2. 2 tablespoons olive oil
3. 1 cup or 1/2 can chick peas
4. Salt and pepper to taste
5. 2 large or 3 medium garlic pods
6. 1 tablespoons fresh lemon juice 
7. 1/2 teaspoon Rosemary (optional)
8. 1 tablespoon roasted sesame seeds or tahini

Heat oven to 400 degrees. Mix the cauliflower with 1 tablespoon olive oil salt and pepper and 2 garlic pods and roast for 20 minutes. Turn once around 10 minutes. Let cool a bit


In a blender blend all the ingredients along with the roasted cauliflower to a smooth paste. Serve with your fav pita chips

Roasted cauliflower

The farmfreshtoyou.com site also delivered an organic cauliflower to me. Seriously I dont rally find any difference between organic and pesticide/fertilizer ridden vegetables. But yes, if the produce is fresh no matter how it us grown it tastes great

Anyway, I was searching for cauliflower recipes and the roasted cauliflower looked yummy. And it turned out great. The original recipe called for Parmesan cheese but I am not a big fan if Parmesan. So I used a heaped tablespoon of finely shredded mozzarella. And it is totally optional. The pieces which did not have cheese in them tastes just as yummy

Roasted Cauliflower

Ingredients
1. 3 cups cauliflower florets
2. 1 tablespoon olive oil
3. 1/2-3/4 teaspoon lemon pepper salt
4. 1 teaspoon chaat masala (optional)
5. 1 heaped tablespoon finely shredded mozzarella cheese (optional)

Microwave cauliflower with a tablespoon of water on high for 3-4 minutes covered. Heat the oven to 450 degrees. Drain and cauliflower florets. Mix the cauliflower with olive oil and lemon pepper. Bake for 20 minutes turning the florets midway. Transfer it to a bowl and ads cheese and chaat masala if using and stir to combine. Serve while still warm
