Cashew stir fried cauliflower

This is one of the most delicious and fasted dishes you would ever make and it is super healthy too. You can serve it with roti or with rice and dal

Ingredients:

  1. 1/2 cauliflower chopped in food processor to about 1/2 cm pieces
  2. 1 tablespoon oil
  3. 1/4 cup chopped onions
  4. 1/2 cup cashews
  5. 3/4 teaspoon each of salt, coriander powder, cumin powder, finely chopped garlic
In a pan heat the oil and fry the onions for 5 minutes. Add garlic and cashew and fry for 1 more minute. Add the rest of the ingredients, reduce heat to medium low, cover and cook for 10-12 minutes. Garnish with cilantro and enjoy

cauliflower dal

I have been searching for recipes to incorporate more vegetables into my little man's diet. He loves dal and rice so I have been making different dal (lentil) recipes with vegetables in them and the following recipe is one of the best ones' yet

Cauliflower Dal (Lentils with Cauliflower)
Cauliflower Dal
Ingredients:

  1. 1/2 cup lentils
  2. 1 to 1.5 cups cauliflower cut into small florets
  3. 1 tomato chopped fine
  4. 1/3 cup finely chopped onion
  5. 1/2 teaspoon each of cumin, fennel seeds, mustard seeds, kalongi (nigella seeds), ginger garlic paste, turmeric
  6. 1/4 teaspoon fenugreek seeds
  7. 1 tablespoon oil
  8. 3/4 teaspoon salt
  9. 2 green chilli chopped

Cook the dal with 3 cups Simmer until the dal is tender, about 20 to 35 minutes. Set aside.
Heat oil in a pan and add all the seeds and fry for a minute. Add the onion and fry for a couple of minutes. Add ginger garlic paste and fry for a minute. Add the tomatoes, cauliflower, add half of the salt cover and cook for 10 minutes.
Add cauliflower to the dal and simmer for 10 minutes. Also add the green chillies. Garnish with cilantro and serve hot.

Roasted cauliflower

The farmfreshtoyou.com site also delivered an organic cauliflower to me. Seriously I dont rally find any difference between organic and pesticide/fertilizer ridden vegetables. But yes, if the produce is fresh no matter how it us grown it tastes great

Anyway, I was searching for cauliflower recipes and the roasted cauliflower looked yummy. And it turned out great. The original recipe called for Parmesan cheese but I am not a big fan if Parmesan. So I used a heaped tablespoon of finely shredded mozzarella. And it is totally optional. The pieces which did not have cheese in them tastes just as yummy

Roasted Cauliflower

Ingredients
1. 3 cups cauliflower florets
2. 1 tablespoon olive oil
3. 1/2-3/4 teaspoon lemon pepper salt
4. 1 teaspoon chaat masala (optional)
5. 1 heaped tablespoon finely shredded mozzarella cheese (optional)

Microwave cauliflower with a tablespoon of water on high for 3-4 minutes covered. Heat the oven to 450 degrees. Drain and cauliflower florets. Mix the cauliflower with olive oil and lemon pepper. Bake for 20 minutes turning the florets midway. Transfer it to a bowl and ads cheese and chaat masala if using and stir to combine. Serve while still warm
