Sweet Potato Roll

Happy new year everyone. Hope you had a wonderful year and ready for another terrific year.
Starting from ThanksGiving till the end of the year average American gains about 3 pounds and I know exactly where my 3 pounds came from :) . One of my co workers got this amazing Pumpkin roll to the office...and it was heaven in my hands ...aaaahhhhh...holy music :)

Since I did not want to make pumpkin roll I made sweet potato roll and it was equally divine and I reduced the amount of fat and sugar as the sweet potato is naturally a little bit sweeter than pumpkin

Sweet Potato Roll (Sweet potato cake rolled with cream cheese filling)
Sweet potato roll
Ingredients:
  1. 3/4 cup all-purpose flour
  2. 1/2 teaspoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon ground cinnamon
  5. 1/4 teaspoon salt
  6. 3 large eggs
  7. 3/4 cup granulated sugar
  8. 2/3 cup home made sweet potato puree
FILLING:
  1. 8 oz. cream cheese, at room temperature
  2. 3/4 cup powdered sugar, sifted
  3. 3 tablespoons butter or margarine, softened
  4. 1 teaspoon vanilla extract
FOR CAKE:
PREHEAT
 oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. 

COMBINE flour, baking powder, baking soda, cinnamon and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in sweet potato. Stir in flour mixture. Spread evenly into prepared pan.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack. 

FOR FILLING:
BEAT
 cream cheese, 3/4 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

Sweet potato scones

I got this beautiful orange sweet potato some time ago and I left it on the counter so that I won't forget about it. I have been meaning to cook it for almost a week and finally I got to it yesterday. I decided I wanted some breakfast item with it and my search lead to sweet potato scones. It is so simple and so delicious .
The recipe called for 2 cup of mashed sweet potato and mine yielded 2 cups so I have enough for one more batch of scones. Yum yum

Ingredients:
1. 1 cup mashed boiled sweet potato
2. 1 tablespoon butter
3. 1/3 cup packed brown sugar
4. 1/2 teaspoon each of salt, baking soda, cinnamon , all spice and nutmeg
5. 2 teaspoons baking powder
6. 1-2 teaspoons plain yogurt
7. 1 egg beaten
8. 2 cups all purpose flour

Beat the egg with salt and sugar . Add butter and sweet potato at room temperature and mix well. Sift the flour with baking powder and baking soda and  the rest of the spices. Mix the egg mixture and knead the dough for about 10 times. If it is too sticky add flour 1 tablespoon at a time.

Pre heat the oven to 400 degrees. Roll it into a circle 3/4 inch thick. Cut it into 8 wedges and lay them on a baking sheet with parchment paper. Bake for 16-18 minutes or until golden brown. Cool for 5 minutes on a wire rack and serve with fresh butter or strawberry cream cheese like I did

Sweet Potato Pie

Today being Thanksgiving I made a delicious assorment of dishes for the family and friends to enjoy. And ofcourse no meal is complete without a dessert. And thr dessert for today is the all time favourite Sweet Potato Pie.
                   This was a alternate choice for me, as my first choise for today's pie was pumpkin but I went shopping a bit late and by that time, the store I went to was completely empty of any canned pumpkins as well as fresh pumpkins. I know...UNBELIEVABLE. But, its true and luckily I had some sweet potatoes at hand. And they make a sweeeeeet Sweet Potato Pie

Sweet Potato Pie (Sweet potato mix baked in a home made pie crust)

Sweet Potato Pie
Ingredients for Pie Crust:
  1. 1 cup all purpose flour
  2. 1/2 teaspoon salt
  3. 2 tablespoons brown sugar
  4. 1/2 cup chilled butter (put the butter in the freezer for 15 minutes before use)
  5. 1/4 cup chilled water
Mix the flour with salt and sugar and stir in chilled butter. Add 1 teaspoon water at a time and mix the dough till it comes together. make it into a ball and wrap in a plactic sheet and refridgerate for 30-60 minutes. Add some flour on a clean counter top and roll the dough into 1/4 inch thick pie crust. Add this to a pie pan.

The recipe is for one 9 inch pie crust
Ingredients for Sweet Potato Pie:
  1. 1 lb sweet potatoes boiled in a cooker for 3 whistles.
  2. 2 eggs
  3. 1/2 cup milk
  4. 2/3 cup sugar
  5. 1/2 cup butter
  6. 1/2 teaspoon each of cinnamon, ground nutmeg, vanilla essence
peel the sweet potato and mash them with a fork and let it cool. After it comes to room temperature add the rest of the ingredients and mix well.
Add it to the pic crust and bake at 350 degrees for 50-60 minutes or until a tooth pick or a knife inserted into the pie comes out clean.
Serve warm or at room temperature or cold with ice cream or whipped cream
