Chicken Cauliflower fry

This chicken cauliflower dry is pretty similar to Chicken 65 but is a little more healthy , all thanks to the added cauliflower. Just to sneak in some vegetables into every one's plate.

Ingredients

  1. 2 boneless skinless chicken breast cut into small cubes
  2. 1 tablespoons corn starch
  3. 2 tablespoons all purpose flour
  4. 2-3 tablespoons oil
  5. Handful of curry leaves
  6. 2 big or 3 medium garlic pods chopped
  7. 1/2 of a large size cauliflower cut into florets
  8. 1 teaspoon coriander powder

Ingredients for Marinade:
  1. 1 heaped teaspoon ginger garlic paste
  2. 2 tablespoons fresh squeezed lemon juice
  3. ½ teaspoon each of turmeric, red chilli powder
  4. ¾ teaspoon salt
Marinade the chicken with the ingredients in marinade and set aside for at least 45 minutes. Add the all purpose flour and corn flour and stir to coat well .
In a non stick pan heat the oil and add the curry leaves and after 30 seconds add chicken in one layer and on medium low flame fry the chicken  for 5 minutes. Add the cauliflower and coriander powder and stir to combine and cover and cook for 15 minutes.  Give a taste test and adjust the salt if needed. Garnish with cilantro and enjoy with hot steamed rice and Palak Dal

                            Black pepper Celery Chicken

                            Black pepper Celery Chicken
                            Chicken with Celery and Almonds
                            Ingredients:

                            1. 1 lb chicken breasts  cut into 1/2 inch pieces
                            2. 2 tablespoons corn starch
                            3. 4 celery stalks, thinly sliced diagonally
                            4. 1/2 medium white onion sliced
                            5. 1 tablespoon each of soy sauce, white vinegar
                            6. 1 teaspoon each of grated ginger, grated garlic
                            7. 1/2 teaspoon black pepper
                            8. 1/2 teaspoon numbing peppers (optional)
                            9. 2 tablespoons vegetable oil
                            10. 1/4 cup roasted salted almonds (optional)
                            11. 3 scallions, thinly sliced white and green, separated

                            Marinade the chicken with salt, pepper, corn starch and ginger for atleast 30 minu.tes
                            Mix the soy sauce and white vinegar in a medium bowl, set aside.
                            Heat a large nonstick skillet. Add the chicken and fry for 8-10 minutes until done. Drain and set aside.
                            Add the remaining 1 tablespoon of the vegetable oil, the celery and onions. Fry for about 5 minutes. Add garlic and fry for 2 more minutes. Add the chicken back to the pot and add the soysauce and vinegar and mix well.
                            Give it a taste taste and adjust the salt and add the almonds and scallions and serve immediately. Enjoy

                            Chicken Stir fry Indian Style

                            I love making stir fries which are quick and easy and have some meet and a ton of vegetables in it. When I started searching for the recipes all I could find are Chinese...ofcourse Stir Fry is all Chinese I know (roll eyes)

                               but but but...I like stir fry and I do not always want to eat Chinese.

                            So I made my own...Chicken stir fry with Indian spices and boy oh boy it was yummy

                            Chicken Stir Fry with Indian spices
                            Ingredients:

                            1. 1 lb chicken cut into 1 inch cubes but only 1/4 inch thick.
                            2. 1 tablespoon each of coriander powder, 
                            3. 1 teaspoon cumin powder
                            4. 1/2 teaspoon salt + more to taste
                            5. 1/2 teaspoon chilli powder
                            6. 1 teaspoon dried mango powder (optional) (substitute fresh squeezed lemon juice)
                            7. 2 tablespoons oil
                            8. 1 teaspoon ginger garlic paste
                            9. Your choice of vegetables (I used mushrooms cut into thick slices, onions, bell pepper) (Can also include Zucchini and Squash
                            Marinate the chicken with salt, chilli powder and ginger garlic paste and lemon juice for 30 mins.
                            In a pan heat 1/2 the oil and add the mushroom and fry on high for 5 minutes. Add the rest of the vegetables and fry for 5-10 minutes. Drain.
                            Add the rest of the oil to the pan and add the chicken and fry for 10 minutes until its cooked through. Add the vegetables back and add the spices and add salt according to taste.

                            Garnish with hand full of cilantro and enjoy with white or brown rice

                            Diet coke chicken

                            The search started for some Chinese chicken recipes and I was also looking to add some vegetables to the chicken. I ended up finding this recipe awesome recipe which called for Pepsi max and diet code. But all I had was the new #cokezerosugar . So I added my own little twist to the recipe and it was great


                            Coke Zero Chicken (Chicken cooked in coke zero)
                            Diet Coke Chicken

                            Ingredients

                            1. 1 lb chicken breast cut into bite size pieces
                            2. 1 can coke zero
                            3. 1 heaped teaspoon corn starch
                            4. 1 tablespoon each of low sodium soya sauce, rice vine vinegar
                            5. 2 tablespoons tomato ketchup
                            6. 1 chicken bouillion
                            7. 1 tablespoon oil
                            8. 1/2 teaspoon each of garlic and ginger grated, white pepper and black pepper
                            9. 2 cups your fav vegetables (I used broccoli, carrots, mushrooms, sliced onions)
                             Marinate the chicken with half of vinegar and soya sauce and the corn starch for 20 minutes.

                            In a pan heat the oil and fry the chicken for 7-8 minutes. Drain and set aside. Add a little bit of oil if needed and cook the vegetables for 6-7 minutes. Add ginger garlic and fry for a minute. Add the rest of the ingredients and coke and simmer for 10 minutes. Add chicken back to the pot and simmer till the gravy thickens to your liking (around 10-12 minutes). Garnish with fresh green onions and cilantro and enjoy over a bed of white rice or with Fried rice
