I love Lima bean. My hubby does not. So once in a while when he is not home for lunch I make dishes that he doesn't enjoy.
So I decided to make Eggplant and Lima beans curry . My absolute favorite. But then I also wanted to have eggs so I was wondering how this curry would taste with eggs dropped in it. Guess what...its a whole cultural thing. Baghali Ghatogh is a popular Iranian dish looks like.
So I improvised. I made the eggplant and lima beans curry and added 4 eggs to it after 10 minutes and cooked for 15 minutes . Garnish with cilantro and enjoy with rice
