So...I have become really good at spoiling my eye sight and my sleep schedule by watching a lot of minute long reels all over the internet. One of those shorts on youtube was about this recipe "Copy Cat Cheese Cake factory Cajun Salmon over mashed potatoes".
So I followed it pretty much and served it over spinach and cheese ravioli along with Kale creamy sauce. It was super delicious.

| Cajun seasoned salmon |
Ingredients:
- 6 pieces salmon fillets with skin
- 2-3 tablespoons oil
- 1 tablespoon butter
- 1 big or 2 medium garlic chopped fine
- salt to taste
- 1-1.5 cups cream
- 1 bunch kale stripped off the hard veins, washed and roughly chopped
Ingredients for Cajun Seasoning (or store bought)
- 1/4 cup each of paprika, garlic powder, chilli powder or chilli flakes, black pepper
- 1⁄3 cup dry oregano
With serving with Ravioli, cook the ravioli according to package directions
Mix all the ingredients together for the Cajun seasoning and store in a tight lidded jar.
wash and dry the salmon fillets. Lay then skin side down and sprinkle with some salt. Sprinkle generously with the cajun season. set aside.
Heat oil in a non stick pan. Sear the salmon skin side down for 3 minutes on medium high heat. Flip the salmon fillets carefully and season the skin with salt lightly and lighlty with the cajun seasoning. Fry them for 3 minutes (My salmon fillets were not very thick. They got cooked on the stove top itself, so I skipped the oven)
Drain and place it on a grill skin side down so that they don't sweat and become soggy
NOTE: if the Salmon fillets are over 1.5 inches thick, finish cooking them in a 350 degrees pre heated oven for 3-4 minutes
In the same pan reduce the heat to medium low add the butter and garlic and fry for 30 seconds. Add about 1 tablespoon of the cajun seasoning and add the kale if using and fry for 2 minutes. Add the creme and let it simmer for 2-3 minutes. Add the cooked ravioli and cook further for 2 more minutes. Sprinkle with 1-2 tablespoons of parmesan cheese if desired (I skipped this as my fam doesn't like it)
Spoon 5-6 ravioli on a plate. Top with with Salmon and add some more sauce on top. Enjoy!
