Grilled chicken

 This grilled chicken recipe is super delicious.

Do not want to grill...pan fry it with a bit of an oil and its equally delicious.

Serve it with Naan, Pita bread, rice, spaghetti..whatever you live...eat it on the side with a salad as the main dish. 


Grilled chicken (Chicken marinated with Indian spices)

Ingredients:

  1. 1 lb chicken breast cut into bite sized pieces
  2. 1 small/medium small onion ground to paste
  3. 1 inch x 1 inch ginger peeled
  4. 2-3 cloves of garlic
  5. 1 tablespoon each of oil, fresh lemon juice or white vinegar
  6. 1 teaspoon each of salt, cumin powder, coriander powder, garam masala
  7. 1/2-3/4 teaspoon chilli powder
Grind the onions and ginger and garlic into paste. Mix all the ingredients together and marinate the chicken 30 minutes to 4 hours
Heat a pan or a grill. If you are grilling it, put the pieces of chicken on skewers and grill on a pan, else all the "masala" (onions and spices) will fall on the grill fire and make a mess.
If cooking in a pan, heat the pan and on high heat cook the chicken for 15-20 minutes until it becomes dry and light brown in color. Enjoy

Grilled vegetable and chicken salad

Sunday evenings come too fast and before you know it, its time to wind up the weekend and get ready for a busy week. Its always great to have a dinner which is super fast to make and healthy and yummy to eat.

Grilled Chicken and vegetable salad
Ingredients:

  1. 2 chicken breast cut into bit size pieces
  2. Ingredients for marinating chicken : 1 teaspoon each of salt, fresh ground black pepper, garlic powder, onion powder, Italian seasoning + 2 tablespoons olive oil
  3. 1 medium zucchini
  4. 1 medium squash
  5. 1 medium carrot
  6. 1/2 red bell pepper ( 1 used 6 sweet peppers halved)
  7. Ingredients for the vegetables : 1 teaspoon each of  1 teaspoon each of salt, fresh ground black pepper, garlic powder, onion powder, Rosemary, coriander powder + 2 tablespoons olive oil
  8. 1 cup orzo pasta if desired...cooked to package directions
Cut the chicken into bit size pieces and add all the ingredients in #2 and set aside for 15-30 minutes.
Cut all the vegetables into bite size pieces and lay on a baking sheet and add all the ingredients in #7.
Preheat oven to 400 degrees. Bake the vegetables on the lower rack and chicken in the middle rack for 25 minutes. Stir mid way.
Take the vegetables out and bake the chicken for 5 more minutes.

Serve with orzo if desired or just vegetables and chicken if a sprinkle of cheese

Cabbage rice

I was going to make Chicken Tikka and I was looking to serve it with some vegetables and rice. But then I found the rice recipe which has lots of cabbage in it and thats what is our dinner today.

Ingredients:

  1. 2 cups cabbage sliced thin
  2. 1 cup rice cooked as per directions
  3. 1/2 teaspoon each of cumin, urad dal, mustard seeds, salt, finely chopped garlic
  4. few curry leaves
  5. 2 dried red chillies
  6. 1/2 cup sliced thin red or white onions
  7. 2 tablespoons sambar powder or less to taste
  8. 1 tablespoon each of  oil and fresh squeezed lemon juice, roasted desiccated coconut
  9. 1/2 cup fresh green peas
In a pan eat the oil and fry the cumin, urad dal, mustard seeds, curry leaves and dried red chillies for a minute. Add the onions and fry for a few minutes. Add the cabbage abd fry for 7-10 minutes along with the salt. Add garlic and peas and stir well. Add flushed up rice and the sambar powder and stir to combine. Reduce heat to low and  add the lemon juice and cover and let cook for 5 minutes. Garnish with cilantro and serve with dry  chicken tikka or chicken tikka masala and raita
