Zucchini corn cakes

This recipe is called a cake for lack of any other proper term. This is not a cake nor does it have sugar as an ingredient. But it turns out a bit sweet because of the natural sugars in corn

This is a great sports night snack

Zucchini corn cake (grilled corn and zucchini patty)


Zucchini Corn Cakes


Ingredients
  1. 2 cups frozen corn thawed
  2. 1/2 cup each of grated mozzarella cheese, bread crumbs
  3. 11/2 cup grated zucchini (Squeeze some water out of it)
  4. 1/2 -1 cup all purpose flour (Depending on how watery your zucchini and corn are)
  5. 1/2 teaspoon each of salt and pepper or more to taste

Pulse the corn 5-7 times. Mix all the ingredients and divide it into 6-8 parts and make it into 1/2 inch thick patties and let it set in the fridge for 30-60 minutes. Heat a grill and grill on medium heat for 3-4 minutes in each sides

Let it cool a bit and serve

apple chips

A couple of weeks ago we went apple picking. After eating fresh apples, after eating two batches of yummy apple pie a few apples were still sitting there and I did not want to make apple pie ago, cause it is getting close to pumpkin pie time. So I made apple chips, my kids favorite. And super easy to make and yummy to eat

Ingredients

  1. 3 apples peeled and sliced into 1/8 inch or thinner circles
  2. 1 tablespoon white sugar
  3. 1/2 teaspoon cinnamon
Preheat oven to 275 degrees. Lay the apple chips in a single row and sprinkle with cinnamon and sugar mix. Bake for 45 minutes. Let cool a bit and enjoy

Power balls

There has been a bounty of sweet potatoes at my super market and I have been making the sweet potato scones and I was searching for some other recipes for sweet potato. I found the recipe to make with protein rich nuts. The balls are super delicious and power house of protein. You can make it into squares or bars or any other shape which is convenient to you

Power Balls (Protein rich breakfast balls)

Ingredients:

  1. 1/2 cup cooked sweet potato 
  2. 2 packets quaker quick oats with walnut and raisins
  3. 1/4 cup unsalted sunflower seeds
  4. 1/4 cup almonds
  5. 2 tablespoons each of dates paste, peanut butter
  6. 1 tablespoon honey or to taste
  7. 1 teaspoon vanilla extract
  8. 1 tablespoon sesame seeds
  9. Calorific info for the power balls
Pulse the oats, sunflower seeds and almonds till they become coarse. Add the rest of the ingredients and pulse till it all comes together. Make into walnut sized balls and store it in the fridge. Enjoy your breakfast balls rich in protein
